Last day at Expo Osaka 2025 in Japan. Such a journey!

October 13 was the final day of Expo Osaka 2025. Representing the Nordic Pavilion’s restaurant has been an honour, and an experience I’ll carry with me.

The appetite for Nordic food with Japanese flavours has been unmistakable. We averaged 3,500 visitors a day. So much fun! Swedish meatball sandwiches with beetroot salad and shiso, Skagen with yuzu kosho, pickled herring with wasabi cream, gravlax with miso mustard-dill sauce, plus waffles, cinnamon buns and semlor flew off the counter.

Being part of a world expo has been something special: meeting people from all over the globe, gaining new colleagues and contacts, and getting to meet HM King Carl XVI Gustaf 👑.

Now it’s just a question of when the next trip to Japan will be. Until then, I’m bringing home the memories, flavours and experiences.

A warm thank-you to all the staff who were on site throughout. An impressive effort with minimal resources. THANK YOU!
